Easy Bean Soup From Wayne Wallace
Wayne says it’s getting to be that time of year again. Temperatures are dropping and the desire for a warm comforting bowl of soup would really hit the spot. He says to try his recipe for bean soup when you get that craving and want it now.
6 strips Bacon, diced 1 medium Onion, diced 2 stalks Celery, diced 2 15.8-ounce cans Great Northern Beans (3-1/2 cups) 2 14-ounce cans Chicken Broth (4 cups - Swanson works well) fresh ground Black Pepper - Salt or Seasoned Salt if desired but probably not needed
Brown diced bacon in a heavy pot.
Add onion and celery - saute until just tender.
Add beans and broth (if you prefer a thicker soup, start with 3-1/2 cups of broth and adjust as desired) - simmer for 20 minutes.
Adjust seasonings. Serve hot with crusty bread or crisp soda crackers. Serves 6 to 8.
