Anna Maude’s Cheese Chess Pie
I’m told this recipe came from the old Oklahoma City Anna Maude Cafeteria. Not sure where I got this but the one thing I am sure about - is how really good this pie is, even though it is a dieter’s nightmare or better yet, daydream, simply irresistible.
1-1/2 cups Sugar 3 tablespoons Flour 1/8 teaspoon Salt 1 teaspoon Baking Powder 4 Egg Yolks 3 tablespoons Butter, melted 1 cup Milk 1/3 cup grated Wisconsin or Cheddar Cheese 1 whole Egg 1 tablespoon Sugar 9-inch unbaked Pie Shell
Sift 1-1/2 cups sugar, flour, salt and baking powder together in a mixing bowl. Add egg yolks and beat well. Add melted butter, stir and set aside.
Meanwhile, in a saucepan, bring 1 cup of milk to a boil, add cheese and stir until melted. Set aside to cool slightly while preparing the rest of the pie.
In a small bowl, beat together 1/3 cup milk, whole egg and 1-tablespoon sugar. Add to yolk mixture along with the cooled milk mixture. Beat well.
Pour into a 9-inch unbaked pie shell. Bake in a preheated 400 degree oven for 40 minutes or until knife inserted in center comes out clean.
