Avocado Pita Pockets From RIG Greer
Here’s a fantastic combination of flavors featuring an avocado salad, fresh tomatoes, homemade Hummus and Pita bread from friend, Rig.
Make the Avocado Salad first; while it’s chilling, prepare the Hummus.
Ingredients needed for Avocado Pita Pockets: Hummus 4 Pita Bread Rounds, halved Avocado Salad Romaine Lettuce, chopped or shredded Tomato Slices
Avocado Salad 2 large ripe Avocados, coarsely chopped 4 large Radishes, chopped 2 stalks of Celery, diced 2 Green Onions, chopped 2 tablespoons Lemon Juice 2 tablespoons Olive Oil 1/2 teaspoon Salt 1/4 to1/2 teaspoon Pepper
In a large covered bowl, mix all ingredients together, cover and chill for at least 1-hour.
Hummus for Avocado Pitas 1 15-ounce can Chick Peas (rinsed and drained) 3 to 4 Garlic Cloves, minced 1/3 cup Tahini 1/4 cup Lemon Juice 1/4 cup Water 3/4 teaspoon Salt
In a food processor, process chick peas until smooth, stopping to scrape down the sides. Add garlic and remaining ingredients; pulse until blended. Pour into a bowl, cover and chill until needed.
Note: Tahini is Sesame Paste and can be found in most supermarkets or specialty stores.
Assembly: Spoon 1/4-cup hummus and avocado salad into the pita halves. Add tomatoes and lettuce. Serve immediately.
